Kigami 3(Hitachi) - Cutlery tool steel. Pretty much identical with Shirogami 3 steel, except it's not as pure as Shirogami counterpart. Used in mid range kitchen knives and other cutlery, also used in various cutting tools. With everything top notch Shirogami 3 will definitely outdo Kigami 3, but otherwise, if you have to pick between those two steels from different makers, I'd go with the maker that has better reputation, that will make more difference than counting atoms in the alloy. Gets very sharp, works well with high polished, acute edges at high hardness.
